Debo’s Butternut Cole Slaw

A most outstanding cole slaw that’ll knock your socks off with its taste, appearance and nutritional information.  It held up GREAT!!  I made a batch and served it for the next three days.  Day one I served it alongside my grilled salmon.  Day two we served it on our barbecue sandwiches.  Day three I made my husband a Bacon Swiss Debo’s Black Bean Burger with Butternut Cole Slaw on Rye Toast…sounds a bit busy and yes defeating the purpose of my vegan black bean burger, but he loved it!!!


  • Peel one butternut squash (for the recipe below you only need half of it)
  • Shred half of the butternut (like you would cabbage for traditional cole slaw)
  • 1/2 red bell pepper (julienned/sliced thin in 1/2 inch size)
  • 1 clove garlic (minced fine)
  • 2 avocados (peeled and cubed in 1/2 inch chunks)
  • 1 Tablespoon fresh lemon juice
  • Cilantro to taste (we love this stuff and used a heaping 1/2 cup full)
  • 1/4 cup Mayo of your choice
  • salt and pepper to taste
