Debo’s Asian Quinoa

Quinoa is a grain-like crop grown in South America for its edible seeds.  It is naturally very rich in flavor.  It is a complete protein and a good source of fiber.  To me, it is a perfect starch to add to a meal.

A good friend of mine has recently requested “recipes with Quinoa“, so here goes Quinoa recipe #2.  I was first inspired to go one direction with this recipe, but when I opened the refrigerator and “I spied with my little eye”… ginger root…plans changed and my taste buds headed a different direction on me…slightly East.  So here are a couple of different ways to prepare Debo’s Asian Quinoa:

Light Ginger Quinoa

  • 1 Tablespoon Coconut Oil
  • 1 small sweet onion (finely diced)
  • 3/4 inch fresh ginger root (peeled & minced)
  • 4 cloves fresh garlic (minced)
  • 1 Cup dry Quinoa
  • 1 3/4  Cup of Water
  • 1 teaspoon basil (dry leaves)…fresh would be nice as well 🙂
  • 1/2 Tablespoon Kosher Salt

Heat the coconut oil over medium heat.  Add the onion and saute 5-10 minutes until translucent.  Add the garlic & ginger and continue to saute about 1 minute add the quinoa, water, basil, & salt.  Bring to a boil.  Reduce heat to simmer.  Cover with a lid and let simmer for 20 minutes.  Fluff and Serve

A variation of the above:

Make the recipe as directed above.  While it is simmering get started on Debo’s Asian Dressing and veggies:

  • 1/4 Cup Almonds (I had roasted&salted on hand)
  • 1 Tablespoon Rice Wine Vinegar (apple cider vinegar will work too)
  • 1 Tablespoon Soy Sauce
  • 1 teaspoon Honey
  • 3 stems of broccoli (peeled and julienned)
  • 2 carrots (julienned)

Place the almonds, vinegar, soy sauce, & honey in the food processor.  This makes a dressing.  Toss the dressing and julienned vegetables with the Light Ginger Quinoa and you have a slightly different version.  A fuller nuttier flavor with nice crisp bite from the veggies.
